Method

HIDE IMAGES
Step 1
Add the Jersey royal potatoes (400 g) to a pan and cover with water. Cook over a medium heat, until tender, then drain.
Step 2
Heat the vegetable oil (30 mL) in a large frying pan over a medium heat. Once hot, add the onion (1) and garlic (2 cloves) . Cook until soft, then add the plum tomatoes (4) and M&S Bombay-style paste (1 jar) . Cook for 5 minutes to allow the flavours to develop. Season to taste.
Step 3
Reduce the heat, then add the jersey royals, stirring to coat in the sauce. Cook until the potatoes are warmed through. Add a splash of water if needed.
Step 4
Divide the potato curry between serving dishes and top each with the natural yogurt (70 g) , coriander (1 handful) , red chilli (1) and M&S pickled red onions (35 g) .
