For the butterbean mash

15 g
ginger paste
1 g
turmeric
1.2 kg
butter beans , drained, rinsed
3 cloves
garlic , chopped
75 mL
olive oil
plus extra to drizzle

Method

Step 1
Preheat the oven to 220°C/200°C fan/gas mark 7.
Step 2
To make the glaze, whisk the ginger paste (30 g) , turmeric (2 g) , M&S pure honey (85 g) , olive oil (30 mL) , lemon (1) and M&S organic raw apple cider vinegar (15 mL) together with a good pinch of salt. Pour the glaze into a shallow dish and add the Select Farms British pork chops (4) before leaving them to marinate for 5 minutes.
Step 3
Meanwhile, make the butterbean mash. Put the ginger paste (15 g) , turmeric (1 g) , butter beans (1.2 kg) , garlic (3 cloves) and olive oil (75 mL) in a food processor and blend until smooth. Season to taste and set aside.
Step 4
Heat the vegetable oil (15 mL) to a high heat in an ovenproof frying pan. When hot, add the pork chops and sear the meat on each side for 1-2 minutes.
Step 5
Add the Tenderstem broccoli (200 g) to the pan, add a drizzle of olive oil then put it in the preheated oven to cook for 10-12 minutes.
Step 6
Meanwhile, put the butterbean mash in a saucepan and heat on a medium heat, stirring continuously, until hot.
Step 7
To serve, divide the butterbean mash between four serving plates. Top with the pork chops and broccoli, spoon over the pan juices and scatter with flaked almonds (as needed) , if liked.
