sliced into strips

onion , roughly chopped

kidney beans , drained

M&S red salsa
15 g
coriander leaves

lime
juice only
1 pack
soft taco wraps

little gem lettuce , shredded

avocado

lighter mature cheddar , grated

Method

Step 1
Preheat the oven to 180°C/160°C fan/gas mark 4.
Step 2
Place the sweet potato strips (3) on a baking tray, drizzle with olive oil, season with salt and pepper and roast in the oven for 20 minutes.
Step 3
In a large frying pan, heat 1 tbsp olive oil over a medium-high heat and fry the onion (1) for 2-3 minutes, until soft.
Step 4
Add the beans (2 tins) and stir fry for 1-2 minutes before adding the red salsa (50 g) and 100ml water to the pan.
Step 5
Simmer for 5 minutes, then add the coriander leaves (15 g) and the lime juice (1) .
Step 6
Heat the tacos (1 pack) and spread each with ½ tbsp chimichurri (60 mL) , then layer the beans mixture, lettuce (1) and avocado (1) on top.
Step 7
Finish with the grated cheese (80 g) and serve with the sweet potato fries.
