M&S Oakham Gold skinless chicken breasts
cut into bite-sized pieces
30 mL
M&S ketjap manis
plus extra to drizzle

onion , finely sliced
2 cloves
garlic , finely chopped
1 pack
(300 g)
white mushrooms , roughly chopped

M&S free-range mixed size eggs
2 packs
(500 g)
microwave basmati rice
1 bunch
M&S spring onions , finely chopped
200 g
young garden peas , defrosted
1
lime , juiced

Method

Step 1
Mix the chopped chicken (1 pack) with 1 tablespoon of M&S ketjap manis (15 mL) and set aside while preparing the other ingredients.
Step 2
Heat 1 tbsp olive oil in a large non-stick frying pan or wok.
Step 3
Add the onion (1) , chicken and garlic (2 cloves) . Season with salt and stir-fry for 2 minutes until golden.
Step 4
Add the mushrooms (1 pack) and peas (200 g) and stir-fry for another 5 minutes.
Step 5
Push the chicken and mushrooms to the outside of the pan, then crack the eggs (2) into the space in the middle. Scramble with a wooden spoon for 30 seconds, then stir into the chicken and mushrooms.
Step 6
Heat the rice (2 packs) in the microwave according to the packet instructions, then add to the chicken and mushrooms with half of the spring onions (1/2 bunch) and the rest of the M&S ketjap manis (15 mL) Stir-fry for another minute.
Step 7
Squeeze in the juice of the lime (1) and stir through.
Step 8
Serve with a drizzle of the ketjap manis and a scattering of the remaining spring onions (1/2 bunch) .
