For the shortbread

250 g
plain flour
75 g
caster sugar
175 g
butter , softened

For the toffee caramel

400 g
M&S double devon toffees
125 mL
double cream

For the rocky road

200 g
Collection Fairtrade milk chocolate
100 g
dark chocolate
100 g
M&S player of the munch
plus extra for decorating
30 g
M&S pink and white mini marshmallows

Method

HIDE IMAGES
Step 1
Heat the oven to 160°C fan. Line and grease a 20-25cm baking tin.
Step 2
Mix the plain flour (250 g) and caster sugar (75 g) in a large bowl. Rub in the butter (175 g) until the mix resembles fine breadcrumbs. Knead into a dough and press into the lined tin.
Step 3
Bake for 20 minutes, remove from the oven and allow to cool.
Step 4
In a saucepan, heat the M&S double devon toffees (400 g) and double cream (125 mL) over a medium heat. Remove from the heat when the toffees have melted.
Step 5
Add the toffee mix to the cooled shortbread and chill in the fridge.
Step 6
Once the toffee has set, make the rocky road topping. Melt the Collection Fairtrade milk chocolate (200 g) and dark chocolate (100 g) in a microwave or in a bowl over a pan of boiling water.
Step 7
Once melted, stir in the M&S player of the munch (100 g) and M&S pink and white mini marshmallows (30 g) and then add to the top of the toffee. Finish with an extra sprinkle of Player of the Munch.
Step 8
Chill in the fridge until set and then cut into squares and dig in.
