M&S cod fillets skinless and boneless

Method

Step 1
Heat the olive oil (15 mL) in a large, lidded frying pan. Add the onion (1) and red pepper (1) and cook, uncovered, over a gentle heat for 8-10 minutes.
Step 2
Add the dried oregano (2 g) and the M&S sundried tomato paste (35 g) and cook for a further 3 minutes, stirring to avoid burning the paste.
Step 3
Add 200 ml of water and the M&S Spanish pitted hojiblanca olives (100 g) to the pan and simmer on a medium heat for 5 minutes.
Step 4
Place the M&S cod fillets skinless and boneless (4) in the pan on top of the sauce and cook, covered, on a low heat for 8-10 minutes, until the fish is cooked through.
Step 5
Meanwhile cook the M&S risoni orzo pasta (200 g) according to packet instructions.
Step 6
Garnish with basil leaves (4) and serve with the cooked orzo or rice, as preferred.
