Method

Step 1
In a heavy-based frying pan, fry the diced pancetta (130 g) in a dash of oil (as needed) for a few minutes to render the fat, then add the pork mince (500 g) , breaking it up with a wooden spoon. Brown the mince off, then add the M&S Sofrito mix (40 g) , garlic (1 clove) and fennel seeds (6 g) . Sweat the veg in the pan until sweet and translucent.
Step 2
Stir in the M&S Smoked tomato paste (1 jar) , allowing it to caramelise in the pan before pouring in the tomatoes (1 tin) and stock (500 mL) . Bring to the boil, then turn down to a simmer and cook for 25 minutes.
Step 3
Meanwhile, bring a large saucepan of salted water to the boil. Cook the linguine (340 g) for 8 minutes. Drain and set aside.
Step 4
Season the Bolognese with salt (to taste) and black pepper (to taste) and serve with the cooked linguine and a generous helping of parmesan (to taste) .
