coriander , finely chopped

M&S free-range mixed eggs , lightly beaten

Method

HIDE IMAGES
Step 1
Heat a small knob of butter in a small non-stick frying pan over a medium heat.
Step 2
Add the onions (1) with a pinch of salt and fry for 2 minutes.
Step 3
Stir in the Bombay-style spice paste (1 jar) and fry for another 2 minutes before adding the chickpeas (200 g) , two-thirds of the coriander (25 g) and the diced tomato (1) .
Step 4
Give it a good stir, then add the beaten eggs (4) . Cook for 2 minutes until the eggs begin to set on top.
Step 5
Flip over and cook for another 2-3 minutes.
Step 6
Remove from the pan and cut in half. Serve with the remaining coriander and salad (1 pack) .
