Method

Step 1
Preheat the oven to 200°C/180°C fan/gas mark 6.
Step 2
To make the sauce, heat 1 tbsp olive oil in a small saucepan, fry half the M&S fajita seasoning (35 g) for 30 seconds, then pour in the passata (435 g) and simmer on a low heat for 10 minutes.
Step 3
Meanwhile, heat 1 tbsp olive oil in a separate frying pan over a high heat. Fry the onion (1) , peppers (2) , chilli (1) and garlic (2 cloves) until softened. Add the turkey (500 g) and the remaining fajita seasoning. Cook for a few minutes, tossing together.
Step 4
Add the kidney beans (1 tin) with the water from the can and the chopped tomatoes (1 tin) . Simmer for 10 minutes until thick.
Step 5
Spread a large spoonful of the passata sauce onto the base of an ovenproof dish. Divide the turkey mix between the tortillas (8) , roll them up and lay them side-by-side in the dish, on top of the sauce. Pour over the remaining sauce, then scatter over the grated cheese (150 g) .
Step 6
Bake for 10-15 minutes, until the cheese is melted, then scatter over the spring onions (3) to serve.
