feta cheese , crumbled

white pittas
or wholemeal pittas
1 pack
(300 g)
sweet potato fries
or M&S fries or M&S spicy rice

For the salsa

1 tub
(200 g)
mango chunks
chopped into smaller cubes
1/2
red onion , finely diced

1/2
red chilli , finely chopped
1/2
lime , juiced

Method

Step 1
Preheat oven to 200°C/180°C fan/gas mark 4.
Step 2
In a bowl, mix your chicken breast pieces (4) with the olive oil (30 mL) , lime juice (1/2) , coconut and lime seasoning (15 g) and season with salt and pepper. Cook in the oven for around 15 minutes, or until cooked through.
Step 3
To make the salsa, in a bowl mix together the cubes of mango (1 tub) , diced red onion (1/2) , tomatoes (2) , red chilli (1/2) , juice of half a lime (1/2) and season with salt and pepper.
Step 4
Warm your pittas (4) and carefully open them with a knife. Time to assemble. Spoon the aioli (60 g) into the pittas, add the lettuce (to taste) , cucumber (to taste) , tomatoes (8) , chicken and top with the mango salsa and crumbled feta (100 g) .
Step 5
Serve with sweet potato fries (1 pack) , M&S fries or M&S spicy rice.
