Method

Step 1
Pierce each jacket potato (4) several times with a fork and lightly coat them in oil (20 mL) . Place on a baking tray and cook for 1 hour in the oven at 200°C/180°C fan/gas mark 6.
Step 2
When there are around 15 minutes of the potatoes’ cooking time remaining, heat oil (5 mL) in a large non-stick frying pan over a medium-high heat.
Step 3
Add the peppers (3) and chicken breast fillet (570 g) , season and fry for 5-8 minutes until the chicken is lightly golden and the peppers begin to soften.
Step 4
Add the Mexican Paste (1 jar) , keeping the jar, and stir to coat everything in the pan. Fill the empty jar with water (200 mL) , shake and add to the pan. Reduce the heat and simmer gently for 8-10 minutes until a thick sauce forms
Step 5
Cut the jacket potatoes in half and fill with the chicken and pepper mixture, then scatter a handful of the grated cheese (1/2 block) and spring onions (1 bunch) on top of each.
