Step 1
Remove the filo pastry dough (270 g) from freezer ahead of time to defrost.
Step 2
Pre-heat the oven to 190˚C / 170˚C fan / Gas Mark 5.
Step 3
Melt the dark chocolate (100 g) either for 1 minute in the microwave or in a bain-marie.
Step 4
Combine the melted dark chocolate, raisins (75 g) , M&S 100% crunchy peanut butter (125 g) , maple syrup (15 mL) and honey (40 g) in a bowl.
Step 5
Cut the filo into squares and add a spoonful of the filling to each square.
Step 6
Tuck the top and bottom of the square in to stop any filling leaking out, then roll the pastry over the filling into a cigar shape.
Step 7
Brush each roll with melted butter (30 g) and then sprinkle the almond flakes (10 g) on top.
Step 8
Bake the rolls in the oven for 10-12 minutes.
Step 9
Remove from the oven and sprinkle icing sugar (to taste) over the rolls.
Step 10
Serve and enjoy after Iftar.
